Roasted Vegetable & Buckwheat Salad

Ingredients:

  • 1 cup buckwheat groats, rinsed
  • 2 cups water or vegetable broth
  • 1 zucchini, diced
  • 1 capsicum, chopped
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil (but don't be shy)
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ¼ cup feta cheese (optional)
  • Fresh basil for garnish

Instructions:

  1. Preheat oven to 200°C (400°F)
  2. Toss zucchini, capsicum, and cherry tomatoes with olive oil, garlic powder, salt, and pepper
  3. Spread vegetables on a baking sheet and roast for 20–25 minutes
  4. Meanwhile, cook buckwheat by bringing water or broth to a boil, adding buckwheat, reducing heat, and simmering for 10–12 minutes until tender
  5. Drain excess water if needed
  6. Fluff buckwheat with a fork and mix with roasted vegetables
  7. Top with feta cheese and fresh basil
  8. Serve warm or chilled
